The size of the Bartenders Ice block was thoroughly tested to maximize yield and decrease weight.  By default the height achievable through induction plate freezing is 10”.  To select the proper length and width the team at Bartenders Ice Mfg & Co. reverse engineered the block.  

 

The desired finished ice cubes for standard bars include 2” cubes for cocktails served in an Old Fashioned glass, 3” cubes for punch bowls and to be used in a thermal ice ball mould, and 1.5”x1.5”x6” cubes for Collins glasses.  The three types of ice measuring 1.5”, 2”, 3” and 6” are all easily divisible by 12”.   Simple.  We then add on and additional 1” to account for the standard cut width of ⅛” resulting in a 13”x13”x10” block weighing 50 pounds.

 

One 3 day cycle produces 4 large blocks of Bartenders Ice.  Each block can be cut either by hand or machine into the following:​​​
